Fiesta Poached Eggs


Serves 4 - 6


UNITS:

  • Large Skillet

  • Saute Pan

  • Food Processor


INGREDIENTS:

  • 6 slices bacon

  • 2 tsp flour

  • 1/4 tsp salt

  • dash pepper

  • 1 cup evaporated milk

  • 2 tbsp olive oil

  • 1 cup cheddar cheese (#1 cone)

  • 6 eggs - poached

  • 6 toasted English muffin halves


INSTRUCTIONS:

  1. Fry bacon in saute pan until crispy - remove and drain on paper towel.

  2. Rinse and dry skillet.

  3. Add olive oil in same skillet over low heat.

  4. Stir in flour, salt and pepper.

  5. Add milk and cook until thickened.

  6. Add cheese and stir until smooth.

  7. Cover and remove from heat.

  8. Sprinkle bacon on top and serve.
