Potato Soup

3 Quart Saucepan with Cover 2.8L

SERVES: 4-6

 

INGREDIENTS:

  • 2 cups potatoes (#3 cone)
  • 2 tbsp onion (#2 cone)
  • 2 1/2 tsp salt
  • 1/8 tsp pepper
  • 1 tsp flour
  • 2 tbsp olive oil
  • 1/4 cup celery
  • 2 cups water
  • 3 cups milk
  • 1 tbsp parsley (fine)

 

DIRECTIONS:

  1. Preheat pan on medium, add onion and fry slowly until yellow and tender.
  2. Then add salt, pepper, and flour.
  3. Blend well.
  4. Add parsley, celery, potatoes, and water.
  5. Mix thoroughly.
  6. Cover and place over medium heat until valve whistles, close valve.
  7. Reduce heat to low and cook until potatoes are tender.
  8. This takes about 15 minutes.
  9. Add milk.
  10. Heat thoroughly.
