SERVES: 4-6
INGREDIENTS:
- 2 cups potatoes (#3 cone)
- 2 tbsp onion (#2 cone)
- 2 1/2 tsp salt
- 1/8 tsp pepper
- 1 tsp flour
- 2 tbsp olive oil
- 1/4 cup celery
- 2 cups water
- 3 cups milk
- 1 tbsp parsley (fine)
DIRECTIONS:
- Preheat pan on medium, add onion and fry slowly until yellow and tender.
- Then add salt, pepper, and flour.
- Blend well.
- Add parsley, celery, potatoes, and water.
- Mix thoroughly.
- Cover and place over medium heat until valve whistles, close valve.
- Reduce heat to low and cook until potatoes are tender.
- This takes about 15 minutes.
- Add milk.
- Heat thoroughly.
