Eat more parts of your vegetables such as skins, stalks and leaves. Use up your ageing vegetables that would otherwise go in the bin. Choose ‘ugly’ and ‘imperfect’ vegetables to prevent them going to landfill. They’re just as nutritious, and often cheaper.
